Chef Daves Summer Message

As Chef at the Old Mill, I am thankful to be living in this region that offers such an enormous variety of fresh fish and seafood.

It’s my intention to feature northwest, in season seafood to our local and out-of-town guests.

They will be prepared in ways to enhance their delicate and fresh flavors. Cooking methods will include steaming, poaching, broiling, char-broiling, oven baked and cedar planking.

Sauces will be simple and light, using fresh herbs and ingredients, always from  scratch.

We have access to shellfish including Dungeness & Bairdi crab, prawns, scallops, razor, manila & geoduck clams, mussels and oysters. Fish will be fresh, not previously frozen, in season, such as salmon, cod, halibut and sole.

These northwest delicacies will be featured and changed weekly, depending on what is in season. Some seafood will be found in weekly dinner salads and pasta specials which we’ll be serving during the summer months, paired with a selction of our local wines.

So, when thinking seafood, join us at the Old Mill and experience this areas renowned seafood bounty. Dine in a way that will pay tribute to what the Pacific Nortthwest has to offer.
